Brew Stage: Completed

Must:
- 750g honey
- apple juice to the bottom of 1Gal demijohn handle
- 1/2 pkg Lalvin 71B yeast
Additions after racking:
- ~40g dried apples
- Syrup made from 1/4 cup apple juice, 1/8 cup sugar
- 1 cinnamon stick
- 1/8 cup erythritol
*not sure why I didn’t think the syrup would ferment but maybe it was part of the instructions??? not going back to check unless I remake…
***I never made any tasting notes but I remember it being pretty great. I have one bottle left that I'm saving for xmas so will update then
2+ years after bottling: still great. Will definitely remake (hopefully soon...)
started
added homemade nutrient (~1/2 tsp bakers yeast boiled in 1/2 tbsp water)
very active fermentation, switched to blowoff tube
switched back to airlock (needed the tube for a different brew) but the airlock was discoloured within hours
Racked and added dried apples, syrup, cinnamon stick, and erythritol. Increased SG by 3 points
SG went up an additional 7 points. Not sure if all that sugar was from the apples or if I didn't mix in the syrup will enough originally.
Racked then bottles. Made 3 standard bottles + 1.25 500ml bottles
