Must:
- 3.9 kg sugar
- 2 bottles + 1/3 cup lemon juice
- 3tsp Yeast Nutrient
- 1 tsp Yeast Energizer
- Yeast Slurry from another batch (pinot grigio, I think)
Additions:
- 3/4 bottle of lemon juice + ~1/2 cup lime juice at SG = 1.050
- 1/2 tsp kmeta + 2.5 tsp sorbate + 3 cups sugar (~675g) after racking — should have waited a day or two for the sugar but did not ferment any further so all good…
Changes to original recipe:
- More sugar at the start, less at the end (more alcohol, less sweet)
- Had less lemon juice than needed –> substituted ~ 1/2 cup lime juice
- Skipped the 2nd Yeast Nutrient and Energizer additions
Quite tart (more so than previous version)—may be due to less sweetener added. Otherwise, quite good.
Was surprised to find that lemon wine isn't everybody's cup of tea. Can't beat the price so I'll still be making it on the regular but will definitely think twice before gifting in future.

Pretty much clear. Could bottle at any time but will wait until other batches need bottling so I don't have to do it by myself.
