Brew Stage: Completed
Must Ingredients:
- 3.2L Del Monte On Ice Peach-Lychee drink (almost 2 bottles)
- 330g sugar (microwaved at 30-60 second intervals until dissolved)
- 50g beet sugar (crystallized, adjusted OG to account for undesolved fermentables)
- 1/2 pkg 71B yeast
Note: the beet sugar was added as a last minute decision to increase the SG. If I didn’t have it laying around, I would have just added table sugar.
Additions:
- yeast nutrient/energizer as needed
Pre-fermentation taste test: already has some tanin-ish taste. Almost tastes like wine. I'm a little worried it will taste too strong after fermentation...
Pretty great - would make again
Started Fermentation: some of the sugar boiled over in the microwave so slightly less than 330g was used. Added the 50g of beet sugar to increase SG from 1.072
Added 1/4 tsp yeast nutrient
SG still at 1.080 but bubbles are now visible
added ~1/2 tsp yeast energizer
Saw from the iSpindel that the SG hasn't moved in a couple of days. Added ~1/2 tsp yeast energizer.
Showing signs of fermentation again (bubbling, iSpindel has some yeast fallout resting on the bottom)
bottled. made 2 small and 1 large bottles. given the bottle I took earlier plug a bunch of samples, I'm going to say this recipe would normally make 4 bottles.
