Brew Stage: Primary
Must:
- 2*1.89L bottles Ocean Spray Pink Cranberry Juice
- 450g sugar (microwaved with a bit of the cranberry juice at 30 second intervals until dissolved, stirring occasionally)
- 2nd gen Yeast Slurry from White Cranberry Wine
Additions:
- 1/2 cup slurry from another (complimentary) wine after ~2 weeks (optional, obviously)
- yeast energizer as needed
1.065 SG: tastes pretty great. Mild and sweet. If this ferments all the way through then this might turn out good.
Start Date
Can see bubbles so something's happening, SG still stagnant
Added slurry from lemon wine (maybe an ounce or two)
Still bubbling so something is definitely happening but it looks a little weird. I took a sample to check the PH and noticed that at the top it was a bit cloudy—almost like a SCOBY was beginning to form. I gave it a bit of a swirl until the lees were mixed in and will check again later to see what it looks like then may decide to scrap the batch...
I don't see the fogginess near the top anymore so added ~1/4 tsp yeast energizer
Tested PH — around 2.9-3.1. A little low but shouldn't impede fermentation as much as it is. Might try increasing if it stalls again.
